小時候最愛的就是糖醋油條了,每年過年最期待的就是這道!在日本難買油條,我們加入油豆腐,也很美味!這道食譜可以用油條或其他大豆肉代替油豆腐,也可以用自己喜愛的蔬菜替換食材,總之糖醋醬酸酸甜甜加什麼都超級下飯????

油豆腐 厚揚げ fried bean curd
紅蘿蔔 人参 carrots
鳳梨切片 パイナップル スライス pineapple slices
青椒 ピーマン pepper
甜椒 ピーマン bell pepper
蒜頭 ニンニク garlic
大蔥 ネギ leek
洋蔥 玉ねぎ onion
生姜 ginger
香菜 パクチー cilantro
羅勒 バジル basil
- ▶糖醋醬汁 SAUCE
黒蜜 Brown sugar syrup
中濃醬 vegan tonkatsu sauce
黑醋 Black vinegar
老抽 dark soy sauce
料理酒 japanese sake
蒜泥 にんにくおろし garlic paste
番茄醬 ケチャップ ketchup
辣椒醬 チリソース chili sauce
- ▶其他調味料 SEASONING
橄欖油 オリーブオイル olive oil
塩 salt
料理酒 japanese sake
辣椒片 チリ chili
黑醋 Black vinegar
玉米粉 コンスターチ corn starch
水 water
作法 Directions
- 切蒜片、蔥白段、薑片、青椒和甜椒切大塊、紅蘿蔔切花或切片、洋蔥切大塊、油豆腐切塊、準備羅勒和香菜
- 先做糖醋醬:加入黑蜜、中濃醬(黑胡椒醬)、老抽、料理酒、蒜泥、番茄醬、辣椒醬攪拌均勻
- 炸油豆腐至4面金黃起鍋
- 以橄欖油爆香蒜片、薑片,再依序放入紅蘿蔔、洋蔥、甜椒們、料理酒拌炒。
- 加入糖醋醬汁、鳳梨水和鳳梨拌炒
- 放入炸好的油豆腐、大蔥、辣椒片、鹽巴、黑醋拌炒,再用玉米粉+水勾芡。
- 勾芡好就可以盛盤啦~鋪上喜愛的香料、盛一碗飯,上菜♡

Notes
- 醬料比較多是為了增加層次,可以視家中調味料自行刪減
- 可以油條、其他大豆肉代替油豆腐,以及自行替換喜愛的蔬菜
